As I've posted previously, I'm working on a recipe that emulates a thick, sweet spoonful of peanut butter dipped in a jar of blackberry jam/preserves. When I think about how this would provide flavor/mouthfeel, I think of the coldness of the jam and spoon (obviously without the metallic taste of the spoon itself).
I think being able to duplicate this sensation in a juice would be awesome, but am not sure if the answer would be to add a drop of menthol or something similar. Based on the Noted Ep. 54 it looks like Koolada might be the best choice.
Anyone have experience in using an enhancer in this fashion?
